品飲筆記:這款1981年的龐德格力展現出成熟卻仍有活力的波雅克風格,先是薄荷般的清涼香氣,引領成熟黑、紅果實,隨後出現森林地表和微妙的盒雪茄氣息。口感屬於中等酒體,酸度支撐結構,單寧已趨柔順,尾韻悠長而不失優雅。 酒莊與葡園:酒莊位於礫石地帶,土壤為第四紀礫石,整個園區已取得有機與生物動力認證(Ecocert、Biodyvin、Demeter),以自然友善栽培為核心,重視土壤健康與生態平衡。 釀造工藝:人工小箱採收,入廠後手工挑選與去梗,採用原生酵母發酵,約四週的柔和浸皮(以輕柔下壓為主),完成桶內或槽內的乳酸發酵。熟成部分約16–18個月,分別在新法國橡木桶、混凝土陶罐與單次使用桶中進行,帶來層次與溫潤的木質感。 建議享用:酒體已經走向圓潤,建議醒酒45–60分鐘以去除沉澱並讓次級香氣打開,配一塊帶汁紅肉或熟成乳酪尤為合拍。

Tasting Note: A mature Pauillac with an attractive old-claret profile — cool menthol lift on the nose followed by red and black currant fruit, savory sous-bois and a hint of cigar box. Palate is medium-bodied and supple; acidity keeps the wine poised while the fine-grained tannins have softened with age, delivering an elegant, lingering finish. Producer & Vineyard: From a famously gravelly estate certified organic and biodynamic, the property spans extensive vines on Quaternary gravel soils. Ownership under the Tesseron family has emphasised ecological farming and low-intervention viticulture. Winemaking: Hand-harvested in small crates with manual sorting and destemming. Fermented with indigenous yeasts and a roughly four-week maceration with gentle punch-downs; malolactic fermentation completed in vats. Aging was split between French oak and amphora—about half in new oak, with concrete amphoras and one-wine barrels rounding out élevage for 16–18 months. Why buy: This 1981 offers the charm of mature Pauillac — savory complexity, softened tannins and a controlled oak frame. Best gently decanted to remove any sediment and to allow secondary aromas to unfurl.
