Pale salmon in the glass, this Cremant reveals an enticing nose of red apple, tangerine and a wash of citrus peel, underpinned by brioche and subtle yeasty notes. The palate is slender and vividly bright, with a fine, creamy mousse from extended lees contact. Bone-dry and precise, the finish is long and refreshing, marked by citrus and red-berry persistence. Producer notes: made by Domaine Les Temps Perdus under the Clotilde Davenne label, this rosé is crafted in the traditional method with bottle fermentation and generous lees ageing to build texture and depth. Winemaking: hand-harvested fruit, gentle press, secondary fermentation in bottle and extended ageing on lees (typically 12–18 months) before disgorgement; minimal intervention in cellar to preserve freshness and terroir expression. Vineyard: sourced from small plots in Burgundy where cool continental conditions and calcareous clay soils give freshness and a delicate aromatic profile. A versatile celebratory sparkler that pairs beautifully with seafood and light, savory bites.
