品飲筆記:色澤深金至古銅,香氣像一盤濃郁的果乾拼盤——無花果、葡萄乾、橘皮,伴隨太妃糖、黑巧克力與暖香料。入口圓潤飽滿,雪梨桶賦予的甜醇與香草、雪松與微妙木質單寧層層堆疊,尾韻悠長,餘味帶有肉桂、核果與橡木香。 酒廠與生產:麥卡倫以橡木桶管理與精選雪莉桶聞名,這款30年經典版完全在雪莉風乾的西班牙橡木桶中長時間熟成,呈現出酒廠對桶陳工藝的執著與耐心。由Edrington集團所屬的麥卡倫蒸餾、調配與裝瓶,每一步都力求純淨與層次。 釀造與陳年:蒸餾後的酒液在雪莉桶中存放三十年,長時間的木桶互動帶出深厚果乾、焦糖、太妃和香料調性。桶材多為來自赫雷斯(Jerez)的雪莉桶(歐洲橡木與美洲橡木混用),賦予明顯的雪莉影響與成熟的木質結構。 田地與原料:雖非葡萄酒,但原料大受產地影響——來自高地/斯貝賽附近農場的麥芽大麥、清冽的泉水與區域氣候,為基酒提供細緻穩定的骨幹;在冷涼的地下倉庫緩慢老化,讓果香與木質互補而不被掩蓋。 飲用建議:建議使用郁香杯或Glencairn杯,倒入後靜置15–30分鐘讓香氣舒展。可純飲或加幾滴礦泉水以釋放隱藏風味,室溫或略涼的狀態最適合細細品味。

Tasting note: Deep amber with mahogany edges. On the nose, concentrated dried fruits — figs, raisins and orange peel — are woven with warm baking spice, toffee and dark chocolate. The palate is rich and velvety: layers of sherry-infused oak, caramelized sugar, vanilla and subtle cedar build into a broad, warming core. The finish is long, layered and elegant, leaving lingering notes of nutmeg, dark fruit and gentle oak spice. Producer notes: From The Macallan, this 30-year expression is matured exclusively in sherry-seasoned oak casks, hand-selected for their quality. Produced by the Edrington Group and distilled at The Macallan in Speyside/Highlands tradition, it embodies the distillery’s focus on cask craftsmanship and long maturation. Production & maturation: Distilled and married with decades of patient ageing, the spirit spends three decades in Spanish oak casks seasoned with oloroso sherry. The long maturation allows complex interaction between spirit and wood — concentrated dried fruit character, rich toffee, and well-integrated oak tannin. Natural colour and meticulous cask selection are hallmarks of this bottling. Vineyard / grain notes: While not a wine, the whisky’s character is shaped by Speyside’s soft water and locally sourced floor-malted barley from nearby farms. The regional climate — cool, steady and sheltered — plus slow maturation in cool cellars helps preserve delicate fruit notes while developing rich oak-driven complexity. Service & decanting: Pour into a tulip or Glencairn glass and allow to breathe 15–30 minutes to open the aromatics. Best enjoyed neat or with a few drops of water to release hidden layers. Serve at cellar-to-room temperature (16–20°C).
