On the palate it is concentrated yet airy — silky mid-palate texture, fine-grained tannins and an elegant acidity that keeps the finish poised and delicate. Producer Notes: Made by Domaine Bitouzet-Prieur (Vincent & François Bitouzet), a family estate rooted in Volnay tradition. Their Taillepieds bottling aims to express the slope’s limestone-clay soils and the site’s classic Volnay perfume and finesse. Winemaking Notes: Hand-harvested fruit is handled gently with careful extraction to preserve aromatics and texture. Fermentation follows traditional Burgundian practice and the wine receives élevage in oak, balancing freshness with subtle oak influence and allowing the silky tannins to integrate.
