M. Chapoutier — run by Michel and Marc Chapoutier — is a leading Rhône house renowned for expressive, terroir-driven wines. L'Ermite sits at the top of the Hermitage hill around the chapel in poor, granitic soils. Grapes are hand-harvested, lightly cold-settled then fermented entirely in casks at controlled temperatures; the wine spends 10–12 months on lees with regular bâtonnage to build texture before bottling. The result is a precise, long-lived white with strong site signature.
