Champagne de Sousa BIO Grande Cru Cuvee '3A'

酒款風貌:這款特級田特釀呈現明亮金色,先是烤麵包皮、檸檬皮與熟白果、淡淡紅果香氣,礦感與辛香料在鼻中交織。口感豐滿圓潤,泡沫細緻綿密,帶有黃油般的乳化質地與適度橡木香,酸度活潑卻不尖銳,礦物鹽感讓整體更有條理與長度。

生產與田間:出自一個以生物動力法栽培、擁有Demeter認證的小型家族酒莊,三個「A」村(知名特級田)給予酒款獨特的石灰質礦性與聚焦度。葡萄樹齡偏高,土壤管理與低介入農法讓果實有更多表現力。

釀造:使用傳統法氣泡釀造,大量桶內發酵與陳年,並保留一定比例的永續酒液作為陳年基礎,造就豐富的口感層次。低劑量(Brut)處理,保留清新酸度與延展性。

品飲小提示:建議開瓶前稍微靜置或輕輕醒15分鐘,搭配海鮮、燒烤雞肉或成熟奶酪都很合拍。配餐易上手,適合想要豐富口感又不失清爽感的場合。


Tasting note: Golden-hued and generously aromatic, this Grand Cru cuvée opens with toasted brioche, lemon-zest and ripe orchard fruit, threaded with dried-citrus and a stony minerality. On the palate it’s rich and textural — plush creamy mousse, a buttery depth from barrel ageing and lively, citrus-driven acidity that keeps the wine taut and very food-friendly. Spicy accents of ginger and clove and a long saline finish complete the picture.

Producer notes: From Champagne De Sousa’s biodynamically farmed Grand Cru parcels (the eponymous “3A” sites), this cuvée benefits from meticulous low-intervention viticulture and Demeter certification. The house is known for marrying old-vine concentration with precision and a respect for terroir.

Winemaking notes: Crafted by the traditional method with extensive barrel work and a preference for aged reserves, the blend leans on a base vintage with a meaningful share of perpetual reserve. Barrel vinification and careful élevage give the wine its rounded texture; disgorged with a low Brut dosage for freshness and length.

Vineyard notes: Fruit comes from high-quality Grand Cru slopes with chalky, saline soils that lend mineral tension and lift. Old vines and attentive biodynamic practices yield concentrated, racy fruit with elegant phenolic structure.
