2008 Dom Pérignon Rosé is a masterful vintage that pairs radiant perfume with serious structure. Pale salmon-copper in the glass, it opens with petals and bright red fruit — raspberry, strawberry and a touch of orange peel and kumquat blossom. Extended ageing on lees (nearly 12 years en tirage) gives a fine, creamy mousse and autolytic notes of brioche and toasted hazelnut, while careful disgorgement and a Brut dosage preserve vibrant acidity and minerality. The palate is layered: juicy red fruit and citrus lift, subtle savory/forest-floor hints (mushroom, gentle peat) and a refined chalky finish that lingers. Producer philosophy here is exploratory and exacting: parcels from top Côte and Mont areas were blended, aged slowly and finished with the house’s rigorous precision to create a rosé both immediate and ageworthy. Serve slightly chilled, allow an hour of aeration for the aromas to bloom. Excellent with rich seafood, foie gras or lightly spiced dishes.
