酒莊介紹:Pio Cesare 為皮埃蒙特的老牌酒莊,世代釀造,現由 Federica Rosy Boffa 掌舵,既尊重傳統也重視產區特色。此酒表現出產地的清晰風土感。
釀造小記:以低溫不鏽鋼發酵與短期澄清與少量接觸酒泥,保留新鮮果香與活潑酸度,不採用重木桶,讓礦質與純淨口感成為主角。
葡萄園與風土:來自 Gavi 附近坡地,石灰質黏土土壤、日夜溫差明顯,加上海風影響,有助於保留高酸與那股獨特的鹹礦味。
飲用建議:稍微降溫後飲用最好,開瓶先靜置 15–30 分鐘氣味會更開放。與海鮮、清淡義大利麵或新鮮乳酪是絕佳搭配。
Tasting note: Bright and focused, this Gavi opens with lifted aromas of lemon zest, green apple and white blossom, followed by a pronounced flinty/mineral thread and a hint of almond. On the palate it is crisp and saline, driven by lively acidity and a clean, zesty finish.
Producer notes: From Pio Cesare — a long-established Piedmont producer — this bottling showcases the cool, calcareous hills around Gavi di Gavi. The estate focuses on expressing site clarity and freshness in its white wines.
Winemaking notes: Fermented and aged principally in temperature-controlled stainless steel to preserve primary fruit and aromatic lift, with careful lees contact for texture and balance. No heavy oak influence, the aim is clarity and minerality.
Vineyard notes: Grapes come from hillside vineyards with calcareous-clay soils and good exposure; maritime influences and cool nights help retain acidity and produce the wine's characteristic saline-mineral backbone.
Serve slightly chilled and allow 15–30 minutes after opening to let aromatics relax. Excellent with seafood, light pasta and fresh cheeses.
