Tasting note
品飲筆記:酒色深沉,香氣以黑色果實為主軸,像是黑醋栗與黑櫻桃,隨後浮現雪松、礦石氣息與香草、烘焙香料的橡木香。口感厚實豐富,果味濃縮但不笨重,酸度帶動全體節奏,單寧扎實且細緻,尾韻乾淨且綿長。
產區與田地:來自海倫娜達科塔的12.4英畝山坡葡萄園,位於聖海倫娜山西側,坡度可達15度。山前一池冷水和迎面西風會沿著行列上吹,延緩成熟期,使果實累積更多層次與平衡感,土壤帶石質與排水良好,果實表現緊實有力。
釀造:小批量發酵,注重溫和萃取與分層,13個月在90%新法國橡木桶熟成。以軟木塞封瓶,具長期陳年潛力。
建議醒酒與搭配:醒約一小時口感更開放,適合與烤牛排、燉牛肉、紅肉滷味或熟成硬奶酪搭配。
Tasting Note: Dense garnet with youthful rim. Aromas open to rich black fruit—cassis, black cherry—layered with cedar, graphite and vanilla from generous new French oak. On the palate it's concentrated and structured: ripe dark fruit core, baking spice and a streak of minerality, framed by firm yet ripe tannins and bright acidity that keep everything in balance. The finish is long and focused.
Producer & Vineyard: Sourced from the compact 12.4-acre Helena Dakota site on the western flank of Mount Saint Helena, the vineyard sits on slopes up to 15° and benefits from cooling westerly breezes off a cold pond. These conditions slow ripening and encourage complexity and balance in the fruit.
Winemaking: Small-lot fermentation with careful extraction, followed by 13 months in 90% new French oak barrels. Bottled with cork closure and built for long-term aging (drinking window 2013–2063).
Serve: Decant for 60–90 minutes and serve at 16–18°C. Pairs beautifully with grilled or braised red meats and mature cheeses.
