Tasting note

品飲筆記:香氣鮮明,以紅櫻桃與覆盆子為主調,帶有橙皮與花香的清爽層次,尾端滲出香草、乾草本與礦物氣息。入口質地柔滑,單寧圓潤而奶油感十足,酸度活潑帶動整體結構,酒體中偏豐滿,餘韻乾淨持續。 酒莊與葡萄園:空白畫布(Blank Canvas)由 Matt Thomson 與 Sophie Parker‑Thomson 經營,這款取自 Renaissance 小地塊,土壤源自冰川礫石混合壤土、片麻岩與石英。植株高密度栽培、VSP 立架與蔓條整枝,正在轉為有機管理,重視田間細緻照顧。 釀造與陳年:全部手工採收,夜間運送到酒廠,約半數採用整串入桶於開頂罐發酵,先冷浸數日後以野生酵母開啟發酵並以人工下插控制提取。陳年於法國橡木小桶(35%新桶)約12個月,整體在酒窖熟成近18個月後以無過濾方式裝瓶,瓶蓋採用螺旋蓋。此年份偏低產量但成熟度良好,夏季回暖與乾爽秋季帶來優秀風味發展。 飲用建議:建議醒酒約45分鐘,能更快釋放果香與礦物細節;搭配烤鴨、油脂豐富的亞洲料理或溫和香料的牛肉菜餚,表現出色。

Tasting Note: Youthful and fragrant, this Central Otago release shows bright red cherry and raspberry framed by orange peel and floral lift, then a savoury dried‑herb and mineral undercurrent. Palate textures are plush and satiny, with round, creamy tannins, a medium‑full body and a medium‑long, nicely balanced finish. Producer & Vineyard: Crafted by Matt Thomson and Sophie Parker‑Thomson, this wine comes from a small Renaissance parcel planted on mineral‑rich, glacial soils — loess, gravels, schist and quartz. Vines are densely planted, VSP trained and cane pruned, managed in conversion to organic practices. Winemaking & Ageing: Hand‑harvested and brought overnight to the winery, about 50% whole clusters were fermented in an open‑top vessel after a cold soak; wild fermentation and hand plunging lend texture and complexity. The wine was racked, spent 12 months in French oak barriques (35% new) and a total of roughly 18 months in cellar before bottling without filtration and finished with a screwcap. Vintage Notes: A cool start and low yields produced concentrated fruit, followed by a warm summer and dry autumn that allowed excellent flavour development. Serving: Best enjoyed after a short decant (about 45 minutes) to open aromatics, or cellared through the drinking window 2024–2034. Pairs beautifully with roast and game birds, rich Asian dishes and mildly spiced stews.
