Tasting note: Bright, focused and nervy, this vintage Extra Brut opens with zesty lemon and green apple, layered with white flowers and subtle orchard fruit. Secondary notes of brioche, toasted almond and a whisper of honeyed autolysis come from extended lees ageing. The palate is driven by sharp, saline acidity and a fine, persistent mousse; citrus and mineral threads linger on a chalky, long finish. Producer notes: From Champagne Regis Poissinet, a small, hands‑on grower-producer, this cuvée reflects careful selection of parcels and attentive cellar work. The house focuses on expressing site clarity and freshness, keeping intervention minimal to let terroir speak through. Winemaking notes: Made by the traditional method with an extended period on lees, disgorged with very low dosage as an Extra Brut. Fermentations are managed to preserve primary fruit while encouraging gentle autolytic complexity, resulting in creamy texture without added sweetness. Vineyard notes: Grapes are sourced from cool-climate parcels within Champagne where chalky, limestone-influenced soils lend precise acidity and mineral grip. Moderate yields and attention in the vineyard help achieve ripe aromatics while retaining the crisp backbone typical of the region. Serve slightly chilled and allow about 30 minutes after opening for aromas to open; pairs beautifully with shellfish, delicate starters and creamy cheeses.
