品飲筆記:卡農2017帶著深邃的黑色果實與花香,黑莓、黑醋栗夾帶一抹蜜柑皮與甘草煙燻氣息;入口飽滿但不厚重,果實緊湊有層次,酸度提亮整體,單寧細緻卻有抓地力,礦物與石灰質餘韻長且清晰。 酒莊與生產:來自列級名莊,酒莊以每個小地塊精耕細作著稱,田間管理嚴格,採收與篩選多以手工完成,力求從田間到酒窖都保留果實最真實的表現。 釀造與陳年:在重力流的釀造空間中溫和處理果實,發酵與浸皮講求纖細控制,之後以法國橡木桶陳年約18個月,賦予香氣細緻的烘烤與香草調性,同時保留鮮明的果味與線條。 葡萄園環境:位於聖艾美濃的石灰岩與黏土坡地,排水良好且含鈣質,這種風土帶來清脆的礦物感和結構感。整體而言,是一款兼具力量與優雅,適合醒酒並耐人尋味的經典紅酒。
Tasting note: A classically structured Saint-Emilion with dense dark-fruit aromas of blackberry and blackcurrant threaded with floral lift, candied orange zest, graphite and a hint of smoked licorice. The palate is concentrated and layered — ripe plums and juicy black fruits supported by taut, silky tannins and bright mineral-driven acidity. A saline, stony undercurrent gives energy while the long, persistent finish closes with spice and tobacco echoes. Producer notes: From a Premier Grand Cru Classé B estate, meticulous plot-by-plot vineyard management and rigorous manual sorting underpin the quality here. The château is known for combining careful vineyard work with respectful, low-intervention cellar practices to produce wines with clarity and longevity. Winemaking notes: Grapes are handled gently in a gravity-flow fermenting room to preserve fruit integrity. Fermentation and élevage are attentive and traditional — extended maturation for 18 months in French oak barrels refines structure and adds subtle oak spice without overwhelming the fruit. Cork closure completes the package. Vineyard notes: The vines sit on the classic Saint-Emilion limestone-clay and gravel slopes, where calcareous soils and good drainage concentrate flavors and lend a distinctive mineral streak.
