Tasting note

品飲筆記:酒液色澤深雅明亮,先是成熟黑莓、黑醋栗與藍莓的果香,接著浮現薄荷清意、甘草與木桶帶來的焦糖、香草氣息。入口直率而多汁,中段果實飽滿,單寧結構緊實但細緻,酸度清新不過分張揚,整體平衡且有礦物與煙草的尾韻。 酒莊與田地:忘憂堡由 Bernadette Villars 與女兒經營,向來以梅度克風格的優雅與穩定著稱。葡萄園位於碎石覆蓋的沙礫與白堊下層(asteria),排水良好,帶來清晰礦感與成熟度。 釀造與陳年:採用溫控不鏽鋼與混凝土發酵槽,成酒後於橡木桶陳年 12–16 個月(約四成新桶),兼具果香的濃郁與木質的香料感。收成期為 9 月中到 10 月初,暖年成熟度高、濃度佳。 口感提示:酒體飽滿但不笨重,單寧圓潤且有嚼勁,適合略為醒酒約一小時再飲用,搭配烤牛排、野味或陳年奶酪特別合拍。語氣輕鬆地說,這是一支成熟、紮實又有韻味的梅多克代表作,適合想要享受成熟風味的人。

Tasting note: Deep, clear garnet with a bright rim. The nose opens to ripe dark fruits—blackberry, cassis and blueberry—woven with minty top notes, a hint of liquorice and warm caramel from oak. On the palate it offers a straightforward attack, juicy mid-palate and a dense yet fine-grained tannic structure; acidity is fresh though slightly restrained, balancing mature fruit and oak spice. The finish is persistent and savory, with tobacco and mineral echoes. Producer notes: Owned and run by Bernadette Villars and her daughters, the estate highlights classic Moulis elegance—concentration without heaviness. The 2003 vintage, harvested between 15 September and 2 October, marries the ripe warmth of the year with measured structure. Winemaking notes: Fermented in stainless steel and temperature‑controlled concrete vats, then aged 12–16 months in barrels (around 40% new oak), producing vanilla and caramel lift while keeping fine tannin grain. Vineyard notes: Soils of Garonne gravel over chalky subsoil (asteria) provide good drainage and mineral lift. The site’s exposure and gravelly terroir helped achieve ripe, concentrated fruit in a warm 2003 growing season. Serving advice: Decant for about an hour to coax out tertiary aromas and soften the tannins. Serve at 16–18°C. Pairs beautifully with grilled or roasted red meats and mature cheeses.

Chateau Chasse-Spleen is a well-regarded estate in Moulis-en-Médoc, long run by the Villars family. The property combines classic Medoc gravelly terroir with careful cellar work—temperature-controlled fermentation and selective oak ageing—to produce wines that balance ripe richness with Moulis elegance.
