品飲筆記:1999 年的愛詩圖爾帶著優雅內斂的成熟香氣,乾燥草本、黑櫻桃與黑果醬的果香,伴隨煙燻、甘草、煙草與雪松的細緻層次。口感中至偏飽滿,酸度明亮而清晰,單寧仍舊成熟但已經柔和,支撐著酒體,使整體顯得沉穩而不厚重。餘韻溫和綿長,偏向理性與精緻。 生產與釀造:酒莊採用傳統波爾多釀法,經過橡木桶熟成(陳桶),以軟木塞封瓶促進瓶內成熟,強調層次與細緻度而非張揚的果味。 葡萄園與環境:來自聖埃斯泰夫二級酒莊,葡萄園地勢良好、排水佳的碎石土壤,受海洋氣候影響,帶出一抹礦質感和清爽的酸度。莊園管理嚴謹,注重產量控制與果實成熟度,讓酒款既有架構也有地域特色。 飲用建議:此酒現階段表現穩定,開瓶前可稍微醒酒約 30–60 分鐘,建議 16–18°C 慢飲,搭配烤牛排或風乾紅肉風味最佳。

Tasting Note: The 1999 Cos d’Estournel unfolds with restrained elegance — dried Provencal herbs, black cherry and cassis framed by tobacco, cedar and a streak of mineral-savory smoke. On the palate it sits medium to full-bodied with lively, precise acidity and ripe but refined tannins, giving structure without heaviness. The profile leans cerebral and polished, showing tertiary notes of leather and spice alongside a long, measured finish. Producer Notes: Cos d’Estournel is famously slow to reveal itself, offering layered aromas and a sensuous, deliberate personality. This vintage combines freshness and complexity, with a pronounced mineral character and a classic, measured temperament as it evolves in bottle. Winemaking Notes: Traditional Bordeaux vinification with careful élevage in oak (oaked maturation). Bottled under cork and matured to allow tertiary development, the wine shows the calm restraint and layered aromatics typical of mature releases from this estate. Vineyard Notes: From the 2ème Grand Cru Classé estate in Saint-Estephe, the vineyards benefit from well-drained gravelly soils and a maritime climate that lends saline-mineral lift. Meticulous vineyard work and low yields favour concentration and clarity of expression. Cellaring & Service: Drinking well now within its window; decant gently for about 30–60 minutes to settle the bottle and let tertiary aromas open. Serve at 16–18°C.
