A classically focused Chablis from Chateau de Beru, the 2020 Cote Aux Pretres opens with bright lemon zest, green apple and subtle white flower notes over a core of wet stone and saline minerality. On the palate it is crisp and precise — high, racy acidity frames tangy citrus and chalky mineral layers, finishing long and steely with a clean sea-spray impression. Producer notes: Chateau de Beru aims to showcase the pure expression of Chablis terroir, emphasizing freshness and minerality. Winemaking: fermented in stainless steel with careful temperature control and often kept on fine lees for added texture; little to no new oak is used to preserve clarity. Vineyard: sourced from cool-climate parcels in Chablis with limestone/kaolinite/chalky influences, exposing the fruit to steady maritime-influenced conditions that favour citrus-driven, mineral styles. Serve well-chilled; open briefly (about 15 minutes) to allow the aromatics to lift. Excellent with shellfish and lighter fish dishes.
