品飲筆記:2015年的高柏麗帶來濃郁而優雅的風貌,先是黑色漿果與黑櫻桃的果香,隱約夾帶石墨、煙草、黑松露與辛香木調。口感果實飽滿但不厚重,單寧細緻且有抓力,酸度提亮整體結構,餘韻則以礦物感與香草、雪松的微妙回味延伸。生產與釀造:酒莊強調手工與細緻管理,2015年天候理想,採收自9月15日至10月8日,園中果實成熟均勻,讓篩選工作非常順利;酒款在橡木桶中熟成約18個月,塑造出圓潤與層次。葡萄園與田地:酒莊位處典型的波爾多礫石土壤,排水良好、受海風影響帶來清新感;園內修剪與葉片管理到位,直到晚秋仍保持健康綠葉,這些細節造就了果實的純淨與礦物輪廓。建議醒酒約一小時,與紅肉或熟成奶酪同享最為合拍,亦具長期陳年潛力。
Tasting Note: A consummate expression of Pessac-Léognan from a sun-drenched 2015. Aromas open to blackcurrant, black cherry and ripe plum, woven with graphite, tobacco, subtle truffle and cedar spice. On the palate it’s richly fruited yet sculpted — layers of concentrated dark fruit backed by a mineral thread, silky but firm tannins and a long, taut finish. Producer Notes & Vintage: Château Haut-Bailly is celebrated for its elegant paradoxes — power with restraint, complexity with poise. 2015 delivered ideal conditions: ample water reserves earlier in the year followed by a warm, dry summer, giving ripe, concentrated fruit and vineyard health that meant minimal sorting. Winemaking & Ageing: Harvested between 15 September and 8 October, the fruit saw careful selection and cellar work; élevage lasted about 18 months in oak, contributing to the wine’s fine-grained structure and vanilla/cedar nuances. Vineyard Notes: The estate’s manicured parcels on well-draining gravels provide freshness and mineral definition; consistent canopy management preserved vibrant leafage deep into autumn, allowing optimal phenolic ripeness. Drinking Window: Built to age, wonderfully approachable after decanting now but will continue to evolve through 2050.
