Tasting note

Tasting Note: Deep ruby with purple edges, the 2016 displays layered dark-berry fruit — cassis and ripe plum — intertwined with tobacco, cedar, gentle mocha and subtle truffle notes. On the palate it is concentrated and powerful yet elegantly balanced: fresh acidity lifts the fruit, ultra-fine ripe tannins provide structure, and a long, spicy finish lingers.
Producer Notes: Château Haut-Bailly describes this vintage as concentrated, powerful and elegant — a wine of both immediate charm and long-term potential. The estate emphasises balance, texture and a restrained, noble perfume across its wines.
Winemaking Notes: Harvest took place from 26 September to 18 October under an autumn of warm, sunny weather that ensured full ripeness. Fermentation and élevage were handled carefully, with 18 months of ageing in oak barrels to refine tannins and integrate oak nuances without overshadowing the fruit.
Vineyard Notes: From classic Pessac-Léognan soils, the vineyard benefits from gravelly, stony terroir and a temperate maritime influence that gives freshness and mineral lift. 2016 was a year of weather extremes — a wet early season followed by a dry, sunny autumn — producing generous yields and exceptionally healthy fruit.
Cellaring & Serving: This is built for ageing (drink window c.2023–2060). If enjoying now, allow at least two hours of decanting to open the aromatics and soften the structure. Pairs superbly with grilled and roasted red meats and mature cheeses.
