Tasting note

品飲筆記:色澤深石榴紅帶金層,香氣濃郁,黑漿果果醬感明顯,伴隨烘烤木香、雪松、些許桉樹清新與短穗煙草氣息。口感豐滿飽滿,質地偏絲滑,但仍保有一定單寧支撐,整體集中而不失優雅,收結清新且回味持久。 酒莊與田間:波菲由Cuvelier家族經營,葡萄園零散分布於整個Saint-Julien,約80公頃,其中Moulin Riche的20公頃連成單一地塊,平均老藤約38年。2005年天氣偏乾但成熟度極佳,於9月下旬至10月初採收,果實濃縮而均衡。 釀造重點:進廠後以嚴謹的分選程序處理(人工分選加光學分選),進行約一週的低溫浸皮以提取香味與色澤,發酵期間每日翻槽以建立結構;之後在法國橡木桶中熟成約18個月,讓縝密單寧與木質香融為一體。 品酒建議:建議醒酒約一至二小時,能讓層次慢慢展現。適合搭配帶滋味的烤牛排、烤羊腿、野味或是熟成起司,享受果實與橡木交織的餘韻。

Tasting Note: Deep garnet with vermeil highlights. The nose opens to concentrated, jammy black fruit layered with toasted oak, cedar, eucalyptus and hints of espresso and licorice. On the palate it is full and plump with a silky mid-palate; tannins remain present but are smoothing with time, delivering a powerful yet refined texture and a persistent, fresh finish. Producer Notes: From the Cuvelier family estate, this 2005 vintage reflects a sunny, classic year with exceptional ripeness. The property’s parcels are dispersed across Saint-Julien (including a single 20-hectare block at Moulin Riche) giving a broad expression of the appellation. Average vine age is around 38 years; hand harvest took place between 26 September and 8 October. Winemaking Notes: Fruit undergoes meticulous sorting (hand tables followed by optical sorting) and a pre-fermentation cold maceration of about a week. Fermentation sees daily pump-overs to extract structure followed by 18 months maturation in French oak barrels, producing an assertive, tightly knit wine with long ageing potential. Vineyard Notes: The estate’s 80 hectares span the cooler, stony sites of Saint-Julien, producing concentrated fruit with good natural acidity and depth. The combination of well-drained soils, careful parcel selection, and mature vines contributes to the wine’s structure and aromatic persistence. Serve & Enjoy: Best enjoyed after decanting (about 90 minutes) to allow aromatic layers and tannins to integrate. Pair with richly flavoured grilled or roasted red meats and mature cheeses.
