Tasting note: A classic Médoc expression from Château Maucaillou’s 1996 vintage — fragrant, mature and savory. Aromas open with blackcurrant and dried plum, layered with cedar, tobacco and a distinct earthy/gravelly minerality. On the palate the wine shows gentle, refined tannins and balanced acidity, revealing cedar-spice and leather towards the finish. Producer notes: Château Maucaillou farms roughly 90 hectares of vines planted on Guntz gravel and Quaternary alluvial deposits; these bright gravelly soils reflect sunlight and help grapes reach full ripeness — a signature of the estate. Winemaking notes: Grapes are hand- or machine-harvested depending on parcel and condition, with initial sorting in the vineyard and careful transport in small crates. Fermentation takes place in fully thermoregulated stainless-steel vats using a two-step temperature regime to favour fruit extraction first, then gentle tannin and colour extraction; malolactic fermentation follows immediately. Ageing: matured in carefully selected French oak, with 40–60% new barrels renewed each year according to vintage character. Serving: decant about 45 minutes to let tertiary notes breathe. Drink with grilled red meats, roast lamb or mature cheeses.
