品飲筆記:先以明亮檸檬皮、青蘋果與柑橘引領,隨後探出鳳梨、黃桃與淡雅金銀花的花香,並有蜂蜜與杏仁的暖意。口感豐滿油潤,中段以酵母泥與木桶帶出的奶油感與香草氣息為主軸,帶有細緻的單寧質感與鹹礦物感,尾韻綿長且層次分明。
酒莊與田間:黑教皇座落於Pessac-Leognan,現由Bernard Magrez掌舵,團隊重視田地分區的精耕管理:地塊分級栽培、自然草生覆蓋、甚至採用牛馬間作犁行,並實施整合性病蟲害管理,獲得Terra Vitis與HVE3等環境標章。為取得均衡成熟,採摘分兩期人工進行,入桶前嚴格篩選。
釀造手法:整串果實進行緩壓、在惰性氣氛下保護香氣,原汁以重力入桶發酵,多以法國橡木桶熟成並進行攪拌(batonnage),約有15%在蛋形混凝土槽中熟成。約10個月的瓶陳讓酒體既有橡木細節,又保有新鮮酸度與礦性感,口感既豐富又帶走向的陳年潛力。
喝法建議:建議開瓶後醒約45分鐘,能讓果香與橡木更好融合,搭配油脂較重的魚類或松露及奶油風味料理最為合拍。
Tasting note: Bright citrus and stone-fruit aromas—lemon rind, tangerine, green apple—open to tropical hints of pineapple and yellow peach, with floral touches of honeysuckle and a nutty almond note. The palate is full and richly textured: glossy, lees-driven mid-palate, gentle oak spice and a slightly phenolic grip that carries clean saline minerality through a long, persistent finish.
Producer notes: Under the ownership of Bernard Magrez and with consulting input from Michel Rolland and Julien Viaud, this estate pursues meticulous parcel-based work. Vineyards are managed with an emphasis on environmental care—natural grass cover, oxen and horse-drawn ploughing between rows, integrated pest management and Terra Vitis and HVE3 certification—allowing fruit to show the terroir's character year after year.
Winemaking: Hand-picked fruit was pressed whole under inert atmosphere, allowing gentle extraction of aromatic juice. Primary fermentation and élevage take place largely in French oak barrels with sur-lie aging and regular bâtonnage; about 15% of the wine matures in an egg-shaped concrete tank. The result is a wine aged 10 months with polished oak influence, creamy lees complexity and focused structure.
Vineyard & vintage: Careful yield control and two-pass manual harvesting (23 Aug–7 Sept) ensured balanced ripeness across parcels for the 2023 vintage. Rigorous sorting at cellar entry preserved freshness and contributed to the vintage's concentration and length. Drink from 2025 for vibrancy, or cellar into the 2030s for added depth.
