Tasting note

來自保威名莊的經典陳年酒,散發黑果與梅子香氣,夾帶雪茄盒、雪松、薄荷與香草的複合調性,還有一股礦質感。口感飽滿且層次分明,果實濃縮、單寧仍然有力但已趨成熟,餘韻帶香料與礦物的回甘。酒莊以手工採收、小箱上岸並做人工分選與去梗,採用原生酵母發酵,約四週浸皮並以柔和壓皮保留細膩單寧,乳酸發酵在大槽完成。陳年約16–18個月:50%新法國橡木、35%混凝土陶罐、15%一酒桶陳年,讓香氣更豐富但不蓋掉土地感。葡萄園約81公頃,鵝卵石壤土,通過有機與生物動力認證(Ecocert、Biodyvin、Demeter)。建議先醒90分鐘,搭配紅肉或熟成硬質乳酪能完美平衡其結構與香氣。

A classic Pauillac Grand Cru from Chateau Pontet-Canet showing the estate’s gravely terroir and biodynamic focus. Aromas of black currant and plum are layered with cedar, tobacco leaf, cigar-box and a thread of mint and herbs, underpinned by sweet, well-integrated oak. On the palate it is full-bodied and concentrated, with dense fruit, firm ripe tannins and a savory mineral backbone. The wine received careful, traditional handling: hand-harvested into small crates, manual sorting and destemming, alcoholic fermentation with indigenous yeasts and a four-week maceration with gentle punch-downs, followed by malolactic in vats. Ageing is notable — roughly 16–18 months split between 50% new French oak, 35% concrete amphorae and 15% one‑wine barrels — which gives spicy oak lift without masking the Pauillac minerality. The estate (81 ha) is certified organic and biodynamic (Ecocert, Biodyvin, Demeter) on classic quaternary gravel soils. Best decanted for about 90 minutes to show its layers; pairs beautifully with rich red meats and mature cheeses.

Chateau Pontet-Canet is a Fifth Growth Pauillac estate owned by the Tesseron family. Over recent decades it has become a benchmark for biodynamic viticulture in Bordeaux, farming some 81 hectares on classic Quaternary gravel soils. The property emphasizes hands-on vineyard work and careful cellar practices to produce structured, terroir-driven wines.
