Sommelier's Notes: Deep, saturated core of black fruit and cassis, edged by tobacco, graphite and a dry, gravelly minerality. With time in a decanter the tertiary notes open — leather, espresso and a hint of smoked cedar.
Winemaking & Vineyard: Hand-harvested, manual sorting and native-yeast fermentation, four-week maceration with gentle punch-downs; malolactic in vats. Maturation: a mix of amphora and French oak (50% new) for 16–18 months. 81 ha certified organic and biodynamic on Quaternary gravel — the terroir gives the wine its signature mineral spine.
