品飲筆記:散發成熟黑果與梅子香,伴隨石感礦物、雪松與淡淡煙草與香料氣息。口感豐富而有層次,果實濃郁但不厚重,單寧紮實又帶滑順感,餘韻帶有鹹香與烤木的細膩回味。 酒莊與產地:Croix Canon 為酒莊的二牌,但延續 Château Canon 對細節的堅持。葡萄來自環繞小禮拜堂的地塊與山坡上的年輕樹,地勢向多爾多涅河緩坡,排水與日照條件促使果實慢熟、風味集中,平均樹齡約 35 年,土壤與微氣候為酒帶出特有的礦質感與結構。 釀造與陳年:在田間與酒窖皆採取精細管理:分地塊照顧、人工篩選,並使用重力流發酵室以溫和處理果實。酒款在法國橡木桶陳年約 15 個月,烘烤與香草感與果味融合良好,支撐長期陳放潛力。 配餐與醒酒:建議醒酒 60–90 分鐘,可讓單寧柔化、香氣開展。適合搭配烤紅肉、燉燒或菌菇風味料理,以及風乾或陳年起司。整體風格結構分明,兼具力量與優雅。
Tasting Note: Deep, inviting aromatics of ripe dark berries and plum framed by crushed stone minerality, cedar and tobacco. On the palate the wine shows concentrated fruit layered with subtle spice and well-integrated French oak — taut and structured, with chewy yet polished tannins and a long, savory finish. Producer Notes: Croix Canon is the estate’s second wine, made with the same attention to detail as Château Canon. It is crafted from the parcels surrounding the chapel on the hillside and from younger vines nearby, reflecting precise, plot-by-plot management that aims for slow, even ripening and refined expression. Winemaking Notes: The team applies meticulous viticultural and cellar practices: manual sorting, gravity-flow handling to preserve whole berries, and a careful fermentation regime. The wine is aged approximately 15 months in French oak, producing elegance and subtle toast without overwhelming the fruit. Vineyard Notes: The vineyards sit on a gentle slope down toward the Dordogne River beside the chapel landmark. The slope induces moderate water stress, encouraging slow, steady ripening and concentration. Vines planted around the chapel and on the hillside average about 35 years old, giving depth and composure to the wine. Serving: Best enjoyed after a short decant (about 60–90 minutes) to allow the tannins to soften and secondary aromas to emerge. Drinking window extends comfortably through the 2020s and into the mid-2030s.
