On the palate it is creamy and focused — lemon curd and stone-fruit richness balanced by chalky minerality and lively acidity. Producer Notes: From the Les Gravieres Premier Cru parcel in Santenay, Domaine Chapelle & Fils crafts small-batch wines that express the Côte de Beaune’s cool-climate elegance. The 2020 shows restraint and precision typical of the site. Winemaking Notes: Hand-harvested fruit is gently pressed and fermented in French oak barrels with a portion of new oak for structure. Partial malolactic fermentation and periodic bâtonnage give creamy texture without overwhelming freshness. Aged roughly 10–12 months on fine lees. Vineyard Notes: Parcels sit on limestone-rich soils with good drainage, giving a mineral backbone and tension to the fruit. Vine age and careful canopy work help achieve ripe flavors while preserving acidity. Serving: Best slightly chilled and opened 30 minutes before serving to allow the aromatics to unfurl.
