Tasting note
A poised Grand Cru from Bougros showing the taut, mineral-driven profile fans expect from top Chablis terroir. Aromas open to green apple, lemon peel, steamed shellfish and a cool, flinty note. The palate is compact and energetic — bright citrus acidity frames chalky minerality and a saline, almost oyster-shell impression. Texture is focused rather than creamy, with a stony backbone and a long, refreshing finish. Producer notes: made by a small, quality-focused domaine working old-vine parcels on steep slopes of Bougros. Vines are tended for balance and low yields to concentrate flavour and reflect the Kimmeridgian soils. Winemaking notes: gentle skin contact and careful temperature control preserve freshness; ageing is handled conservatively to showcase terroir — subtle lees contact and limited/no new oak to retain clarity and flint. Bottled with minimal intervention to keep vibrancy. Vineyard notes: Bougros’ northeast-exposed slopes sit on classic Kimmeridgian limestone and clay, imparting sea-spray salinity and a crunchy mineral line. The site’s steep pitches encourage ripeness with lively acidity, producing wines with both power and precision.
Winery
Domaine les Temps Perdus
Domaine les Temps Perdus is a focused estate known for highlighting single-vineyard personality. Working old vines on steep, limestone-rich slopes, the team favours low yields and hands-on viticulture. Winemaking is minimalistic: precise temperature control, lees contact for texture, and restrained use of oak so terroir remains front and centre.
