品飲筆記:香氣清新,帶有鈴蘭與接骨木花的花香,伴隨梨、青茶和熱帶果的活潑果感;口感以俐落酸度打底,礦物與微鹹感交織,尾韻有一絲胡椒與柔和的橡木與奶油感,層次分明又不失優雅。生產與田間:來自聖布里區內數塊石灰質與燧石土壤的老藤園,產區氣候偏涼,能讓果實保有清爽酸度與香氣。釀造手法:人工採收後溫控發酵,為保留花果香多以不鏽鋼罐為主,少量中性木桶或短時窖泥接觸以增加質地和口感厚度。建議略微回溫或靜置20分鐘再飲,與油脂豐富的魚類、蘆筍或山羊乳酪相當合拍。

Tasting note: Bright and lifted on the nose with floral notes of elderflower and lily of the valley, pear and a hint of green tea. The palate shows zesty citrus and passionfruit framed by brisk acidity, a flinty mineral thread and a subtly saline, peppery finish. Producer notes: From parcels in Saint-Bris within the Grand Auxerrois, the domaine focuses on expressing cool-climate minerality and floral lift. Winemaking notes: Hand-harvested fruit is gently pressed, fermented cool to preserve aromatics, with a measured use of oak and lees ageing to add texture without dominating the fruit. Vineyard notes: Vineyards sit on limestone and flinty soils in a cool continental site, producing grapes with crisp acidity, lively aromatics and pronounced mineral character. Serve chilled; a short 15–30 minute rest opens the aromatics further.

Domaine les Temps Perdus is presented here as the producing estate. The domaine works parcel by parcel in the Grand Auxerrois, prioritising site expression, low yields and attentive cellar work. Fruit is picked at optimal ripeness and handled gently in the winery to retain aromatics and natural acidity. The approach balances freshness and minerality with careful textural support from lees contact and modest oak where appropriate.
