1981 Domaine de Chevalier

A mature Pessac-Léognan classic—tertiary elegance with a long, poised finish.

【Why choose it?】
1) Historic terroir -> Centuries-old gravel soils give a refined mineral backbone for long ageing.
2) Meticulous cellaring -> Hand-harvested and carefully sorted yields a clean, developed profile ready to drink.
3) Mature complexity -> Layers of cedar, leather and dried fruit offer immediate pleasure without long cellar time.

【Sommelier's Note】Gently evolved: open the bottle and expect an aromatic sweep of cedar, tobacco and dried dark fruit, smoothing into a silken mid-palate with softened tannins and an enduring mineral-tinged finish. Best decanted 30–45 minutes to lift tertiary notes and separate any sediment.

【Occasion / Pairing】Ideal for intimate celebratory dinners in Hong Kong—pair with simply seasoned fillet steak, roasted venison or a mature hard cheese board. Serve slightly below room temperature to keep freshness.

【Competitive Edge】Compared with contemporary big-name vintages, this bottle delivers real mature Bordeaux pedigree and depth at a fraction of the often-hyped price—great for collectors who want drinking-ready classic quality.
