The palate is medium-plus, lively with crisp acidity, a creamy mid-palate from lees ageing and a long, mineral-tinged finish. Producer notes: From Domaine Coche-Bizouard, a focused family domaine known for meticulous parcel selection in Saint-Aubin. Les Combes is a Premier Cru site where low yields and careful viticulture highlight the site's limestone character and pure fruit clarity. Winemaking: Grapes are hand-harvested and handled gently at the press. Fermentation takes place in French oak with a portion aged on fine lees to build texture; élevage is careful and measured to preserve freshness while integrating subtle oak influence. Vineyard notes: Les Combes sits on well-drained clay-limestone soils on mid-slopes, with cool nights that preserve acidity and delicate aromatics.
