Tasting Note: Pale-gold in the glass, this Bourgogne Blanc opens with bright green apple, pear and lemon zest, layered over white peach and a hint of stone fruit. Toasted almond and gentle vanilla from barrel ageing add a creamy, buttery thread without overwhelming freshness. The palate shows a silky mid‑palate, balanced acidity and a mineral-tinged finish that lingers with subtle oak spice. Producer Notes: From the family domaine of Fernand & Laurent Pillot, this wine reflects a Burgundian commitment to precision and terroir expression. The estate combines traditional know‑how with careful, low‑intervention work in both vineyard and cellar to preserve clarity and balance. Winemaking: Fruit is selectively harvested and vinified with attention to texture. Fermentation takes place in stainless steel and a portion in oak barrels, with partial malolactic to contribute creaminess. Lees ageing and light bâtonnage enhance mid-palate weight while letting fresh acidity shine. Vineyard: Sourced from well-sited Bourgogne plots with limestone-clay influence, grapes benefit from cool nights and moderate daytime warmth that preserve aromatic lift and acidity.
