彼洛特家族出品的這支2022年夏山夢雪老藤紅酒，來自夏山夢雪村的石灰黏土坡地，老藤產量低、根系深入，帶來成熟卻清新的「土地味」。聞起來是清脆的紅櫻桃與覆盆子，還有森林地表、香菇與淡淡香料的氣息。口感上酸度明亮、丹寧細緻且絲滑，中等酒體被溫和的橡木包裹，整體平衡、優雅。酒莊以家族小規模經營著稱，採手工分選、低干預釀造並在法國橡木桶中陳年，保留果實的純淨與土壤特徵。適合微醒後享用，或搭配烤鴨、野味與蘑菇料理，風味更立體。

This 2022 from Fernand & Laurent Pillot is an elegant village-level red from Chassagne-Montrachet, crafted from old vines and produced in very limited quantities (approx. 4,700 bottles). The nose opens with bright red cherry and raspberry, layered with floral lift and subtle undergrowth — damp leaves and mushroom notes typical of fine Côte de Beaune reds. On the palate it shows lively acidity, silky, fine-grained tannins and a medium body framed by gentle French oak. Winemaking follows a restrained, traditional approach: careful sorting, likely whole-bunch inclusion in places, and ageing in oak barrels that bring spice and structure without overpowering the fruit. Vineyards are on limestone-rich, clay-limestone soils of Chassagne-Montrachet, where old vines give concentrated, refined fruit. Drink now through the next decade (drinking window to 2033); decant for about 30–60 minutes to reveal the wine’s layered aromatics and soften the tannin.

Fernand & Laurent Pillot is a family-run producer based in Chassagne-Montrachet, working with parcels across the village and Côte de Beaune. The domaine focuses on low yields, careful sorting and a traditional, restrained approach in the cellar to reflect terroir. Small production and attention to detail result in village wines with clarity, freshness and a fine balance between fruit and oak.
