品飲筆記:酒香優雅,先有紅櫻桃與覆盆子帶出清新果調,隨後綻放細緻花香與淡淡香料氣息。入口質地柔滑,單寧細緻如絲,酸度明亮帶動整體節奏,礦物感與森林底蘊在尾韻慢慢延展。
酒莊與田地:來自香波木西尼 Les Plantes 一級田,坡面石灰質與黏土交錯,排水良好,產量控制低,人工管理讓每串果實都有空間表現風土。
釀造手法:人工採收後以溫和手法發酵,入桶陳釀接近一年以上,使用法國橡木桶(新桶比例不高),以保留果味純淨與產區細緻感。
口感與配餐:單寧柔順、果酸明亮而不突兀,建議醒酒約45分鐘。非常適合配鴨、野味、蘑菇類料理或成熟奶酪,餐桌上親切又迷人。
Tasting Note: Perfumed and refined, this Chambolle-Musigny Premier Cru opens with bright red-cherry and raspberry aromas threaded with violet and gentle spice. The palate is silkily textured — red fruit, subtle forest-floor savour, and a clear mineral seam lead to a long, poised finish.
Producer & Vineyard: From the Les Plantes Premier Cru site on the Côte de Nuits, the domaine works small parcels on limestone-rich, well-drained slopes. Low yields and attentive canopy work let the site’s finesse come through.
Winemaking: Hand-harvested fruit is treated with gentle extraction and native-yeast fermentation before aging in French oak barrels (a modest proportion new) for roughly 12–18 months. Minimal handling in bottle preserves clarity and delineation of terroir.
Service & Pairing: Serve slightly cool to cellar temperature; decant about 45 minutes for immediate enjoyment. Excellent with roast duck, game birds, mushroom-based dishes and mature alpine cheeses.
