This Les Raviolles from Domaine Jacques Cacheux offers an elegant, terroir-driven expression. The bouquet opens with bright red cherry, wild strawberry and rose petal, layered with forest-floor and spice notes. On the palate it shows lively acidity, fine-grained, silky tannins and a mineral-tinged persistence that lingers. Producer notes: a small family domaine hand-tending parcels in Vosne-Romanée, focused on low yields and careful selection. Winemaking: traditional vinification in small vessels with gentle extraction, followed by ageing in French oak (moderate new oak) to retain freshness and structure. Vineyard: mid-slope limestone-clay soils, old vines and meticulous canopy work yield concentrated, balanced fruit. Best enjoyed after a short decant to allow aromatics to open.
