Tasting note

這支1998年依修茲特級田展現成熟卻仍生氣的風貌。杯中香氣有成熟紅果、帶點乾果的黑櫻桃與覆盆子，接著浮現林下土、菇類與皮革的陳年氣息。入口質地柔順、口感細膩，單寧已圓潤但仍有支撐力，酸度明亮讓整體保持清爽與層次。釀造上酒莊以尊重風土為基礎，田間管理謹慎、控制產量，人工採收並以傳統手法發酵與熟成，讓葡萄園的礫石與黏灰岩土壤特質逐漸在酒裡展現出來。適合慢慢醒酒，配上烤鴨或帶菌菇的料理能把酒的鮮味與陳年香氣推到最好。

This mature Grand Cru opens with a layered perfume of dried cherry, raspberry, forest floor and savoury spice, followed by tertiary notes of leather and mushroom. On the palate it is refined and porous: silky, fine-grained tannins support concentrated late-season fruit and an enlivening acid line. The texture is pliant rather than heavy, revealing complexity from extended bottle age and a longue finale that leaves spicy, mineral echoes. The domaine tends the vines on classic Echezeaux soils of limestone and marl, harvesting carefully and vinifying with respect for terroir to produce wines that age gracefully.
