Tasting note: This Pommard Premier Cru opens with concentrated dark-red fruit—cherry and plum—layered with forest-floor complexity, cured leather, tobacco and a savory mineral streak. The 2017 shows firm structure and ripe tannins balanced by lively acidity and a lingering, saline-tinged finish. Producer notes: Domaine Nicolas Rossignol is a focused family domaine in Pommard, working small parcels with close attention to vine age and terroir expression. The Epenots parcel includes very old vines, contributing depth and a pronounced earthy, saline character. Winemaking notes: Hand-harvested fruit is treated with traditional Burgundian care: natural fermentations, gentle extraction to preserve perfume and structure, followed by élevage in French oak (including a portion of new oak) for around 12–18 months. The result is a wine that balances power and finesse, ready to reward short-term decanting but built for medium-term cellaring. Vineyard notes: Epenots sits on well-drained, stony clay-limestone soils that give ripe, concentrated fruit and mineral drive.
