Tasting note

From two hectares of prized Santenots fruit, this 2014 bottling is assembled from three distinct cuvées — top and bottom of the slope and a sandier parcel edging Meursault. The wine is fully destemmed and handled in a classic, restrained Burgundian style. Aromas open quickly in the glass: red and black fruit framed by a faint briny seaweed note and a hint of spice. On the palate it is medium-bodied with a slightly grainy texture, a lively bead of acidity and taut energy that carries a linear, poised finish with a touch of allspice. Approachable now after a short decant, it will also reward patience in the cellar through the drinking window.

Domaine Nicolas Rossignol is a small family domaine in Volnay known for precise, terroir-driven wines. The estate has gradually consolidated holdings in Santenots; the 2014 Santenots comes from parcels long associated with the Rossignol family. Vines are farmed with attention to vineyard expression, and vinification here favors full destemming, careful extraction and measured élevage to preserve freshness, energy and a clear sense of site.
