Bright and poised, this Extra Brut from Champagne Eric Taillet displays a fragrant bouquet of white-tea, stone-fruit and citrus blossom, with honeycomb and lemon-curd lifting the nose. On the palate it is bone-dry and lively: fine, persistent bubbles carry juicy tangerine and orange-fruit notes framed by brisk acidity and a chalky mineral thread. Based on the 2014 base wine with c.30% reserve wines and finished with a very low dosage (0.6 g/L), the wine is vinified by the traditional method and aged on lees to develop texture and subtle richness. A versatile, food-friendly bottle that pairs superbly with shellfish, sushi-style starters and delicate cooked meats.
