品飲筆記:杯中先是濃郁的黑色果實與熟櫻桃香,接著出現可可、烤核桃與雪松香料,層次分明。口感飽滿、質地細緻,單寧豐滿但柔滑,酸度帶動整體,使餘韻長而鮮明。
酒莊與葡萄園:此款來自 Favia 的 Cerro Sur 系列,採自納帕山坡的小片園地,產量受控、土壤排水良好,陽光與石質土壤共同塑造濃縮果味。酒莊走小量生產、以地塊為本的路線,重視手工管理與果實成熟度。
釀造與陳年:分批小槽發酵以保留細緻口感與層次,隨後於木桶中陳年22個月,讓香料、雪松與果實更加融合但不蓋過原始果味。推薦醒酒1–2小時,或陳放進一步發展。搭配紅肉或味道濃郁的起司最為相配。
Tasting Note: A concentrated, layered Napa offering with pronounced dark-fruit aromas—black currant and dark cherry—lifted by cocoa, toasted walnut and cedar spice. On the palate it is full-bodied and focused: broad, velvety tannins support ripe fruit and a juicy, persistent finish.
Producer & Vineyard: From Favia’s Cerro Sur bottling, this wine showcases small-lot, site-driven fruit from Napa hillside sites where low yields and well-drained soils concentrate flavour. The estate focuses on careful vineyard selection and hands-on viticulture to capture purity and structure.
Winemaking: Fermented in small lots with attentive extraction to build texture, then aged 22 months in oak to integrate spice and cedar notes without overwhelming the fruit. The result is a structured, elegant wine built to age yet already attractive with decanting.
Cellaring & Service: Drinking window spans the near decades—drink now with 1–2 hours decanting for best aromatics, or cellar to allow further harmonisation. Serve at slightly below room temperature.
