Producer & Vineyard: From Favia’s Cerro Sur bottling, this wine showcases small-lot, site-driven fruit from Napa hillside sites where low yields and well-drained soils concentrate flavour. The estate focuses on careful vineyard selection and hands-on viticulture to capture purity and structure. Winemaking: Fermented in small lots with attentive extraction to build texture, then aged 22 months in oak to integrate spice and cedar notes without overwhelming the fruit. The result is a structured, elegant wine built to age yet already attractive with decanting. Cellaring & Service: Drinking window spans the near decades—drink now with 1–2 hours decanting for best aromatics, or cellar to allow further harmonisation. Serve at slightly below room temperature.
