品飲筆記：紅色果實為主軸，帶著迷人的香料調性──甜椒粉、肉桂丁香與一抹豆蔻、百里香。酒體飽滿，口感滑順，單寧呈現粉狀細緻，支撐起果味並把香料層次拉長至悠長的餘韻。 酒莊與田地：Love Over Gold 是專注於產區單一小地塊的酒款製作者，這款取自伊登山谷Mengler's Hill一帶的高海拔老藤園，石質壤土、排水良好，加上晝夜溫差，造就集中而清爽的果酸。 釀造手法：分批小量發酵、延長皮渣接觸以增加質地，進入熟成階段以舊橡木或輕度烘烤桶為主，賦予香料與結構但不壓過果味。酒體經過適度微氧讓單寧更圓潤。 建議飲用：建議醒酒約45分鐘，能把香料與肉香開展出來。搭餐方面很合適配炭烤牛排、烤羊腿、野味或濃郁燉菜，也能和硬質熟成起司互補。

Tasting Note: Bright red-berry core framed by savoury spice — paprika, ground clove and a lick of nutmeg and thyme. The palate is full-bodied with a solid fruit core and powdery, fine-grained tannins that give structure without harshness; the finish is spicy and lingering. Producer & Vineyard: Produced by Love Over Gold from fruit sourced in the cooler, higher-altitude sites of Eden Valley (Mengler's Hill area). Low-yielding blocks on stony, well-drained soils provide concentrated flavour and natural acidity. Winemaking: Fermented in small batches with careful extraction to preserve red fruit purity, followed by extended maceration for texture. Matured in a mix of seasoned oak to add spice and frame the wine without dominating the fruit. Minimal fining retains energy and vibrancy. Service & Pairing: Best served slightly below warm room temperature; decant about 45 minutes if you want to open up secondary spice and savory layers. Matches beautifully with grilled or charred red meats, braised lamb, game dishes and aged hard cheeses.
