品飲筆記：酒液呈深寶石紅，香氣先是黑色漿果與熟櫻桃，隨後跳出黑胡椒與甘草的香料感，並帶有可可與輕微烘烤木頭氣息。口感飽滿，果實濃郁但不膩，單寧細緻綿密，酸度帶出清爽脈絡，收尾長且帶一絲鹹香。
酒莊概況：Love Over Gold 專注在伊登谷的高海拔小地塊，追求土壤表現與風土細節。標示的系列常以精選老藤或低產果實製作，小批次、講究手工處理。
釀造方式：採小槽發酵並以人工或溫和浸皮控制萃取，成熟期在法國橡木桶中陳放以融入香草、烘烤和可可風味，同時保留新鮮果香。瓶陳前會經長時間整合，確保單寧與木質味平衡。
葡萄園環境：來自伊登谷較涼爽的坡地，晝夜溫差大，土壤排水良好且含碎石，低產量使果實更集中。整體風格兼具力量與優雅，適合搭配厚切紅肉或陳年硬質起司。喝法建議醒酒約一小時，若預先醒過風味更為和諧。

Tasting note: Deep ruby with violet hues. Aromas of ripe black fruits, concentrated dark cherry and blackberry are layered with black pepper, liquorice and subtle eucalyptus, followed by cocoa and toasted oak. On the palate it’s full-bodied and intensely flavoured — plush, velvety tannins frame concentrated fruit and spice, finishing long and savoury.
Producer notes: Crafted by Love Over Gold from select Eden Valley parcels, this bottling showcases the cooler altitude and the minerality of Mengler’s Hill–adjacent sites. The wine aims to balance ripe fruit concentration with spice and structural precision.
Winemaking notes: Small-batch fermentations with careful extraction to achieve ripe tannin structure. Matured in a mix of French oak (combination of new and seasoned) to add toast and cocoa notes while preserving fresh varietal characters. Bottled after extended maturation to harmonise oak and fruit.
Vineyard notes: Fruit comes from higher-elevation Eden Valley sites where cooler nights preserve acidity and aromatic lift. Soils are well-drained with stony components, low yields concentrate flavours and contribute to the wine’s focused intensity.
Drink window: Approachable now with decanting, will comfortably evolve for over a decade.

The team sources fruit from selected parcels with low yields and stony soils, aiming to reveal terroir-driven expression. Wines are made in small batches with attention to gentle extraction and oak integration to marry concentration with poise.
