【生產與釀造筆記】葡萄手工採收至近成熟極限,完全去梗並在混凝土槽發酵,每日 1–2 次踩皮促進萃取,發酵溫度不超過 32°C,浸皮 4–5 週以促進單寧聚合。以法國橡木桶陳年 18–20 個月(約 30% 新桶),以自然澄清處理。

【Winemaker & Vineyard Notes】From a roughly 4 ha parcel on a granitic subsoil, grapes are hand-harvested at the limit of over‑maturity for density. Totally destemmed, fermentation takes place in concrete with 1–2 daily treadings, temperature capped at 32°C and 4–5 weeks maceration to polymerise tannins. Maturation: 18–20 months in French oak (≈30% new). Natural clarification.

【Sommelier's Private Notes】On the nose: tarry smoke, blackberry and raspberry, with walnut and liquorice weaving through. On the palate: a strong, velvety entry, concentrated black fruits, savoury tobacco-cocoa layers and a mineral spine that keeps the power focused. Tannins are firm but ripe; finish is long and persistent. Best with a 60–90 minute decant if drinking now; will cellar beautifully for decades.
