Deep, concentrated and unapologetically bold, this 2007 release from Two Hands shows dense layers of mocha, dark chocolate and molasses over ripe black fruit. The texture is fudge-like and velvety, with savory, cured-meat hints and a sense of fruit reduced to an intense core. Acidity is bright and, at times, tart on the finish, giving the wine a lively counterpoint to its richness. Produced under the guidance of winemaker Ben Perkins and the stewardship of Michael Twelftree, this bottling reflects small-batch attention in both vineyard and cellar. Matured in oak to build structure, it rewards short decanting and pairs superbly with roasted red meats, game and aged cheeses.
