品飲筆記:淺玫瑰色,細緻泡沫持久。第一口迎來飽滿覆盆子香,隨之而來的是清脆酸度與微微乳香、穀皮的農家發酵氣息,口感輕盈、乾爽,尾韻留有莓果與礦感。

酒莊介紹:康笛龍(Brouwerij Cantillon)是布魯塞爾的傳統自發酵啤酒屋,家族經營、堅持天然發酵與木桶熟成,作品常帶有明確地區風味與時間沉澱的深度。

釀造說明:以自發酵的老林比克(lambic)為基底,投入大量新鮮覆盆子浸漬、在大木桶中與天然酵母共熟化,待風味融合後回瓶二次發酵定碳。全程不添加商業酵母或人工香料,保留原始微生物的複雜性。

田地與原料:雖非葡萄酒,但這款酒的靈魂來自附近田地與微生物:低產的裸麥與小麥來自Pajottenland地區,覆盆子選自當季果園,森恩(Senne)河谷的自然菌群為風格定調,使果香既鮮明又帶一絲泥土感。語氣輕鬆、適合與朋友分享。


Tasting Note: Pale, slightly rosy hue with a persistent, fine mousse. Aromas of ripe raspberries, lemon peel and delicate farmhouse funk lead to a crisp, mouthwatering palate: bright tartness, a whisper of barnyard complexity and a touch of mineral salinity. The finish is dry, brisk and lingering with fruity echoes.

Producer Notes: From Brouwerij Cantillon — a family-run Brussels institution famed for traditional spontaneous fermentation. Rose de Gambrinus is part of their fruit lambic tradition, a playful homage to Gambrinus with generous raspberry character balanced by Cantillon's signature acidity and authentic wild yeast profile.

Winemaking Notes: Produced with spontaneously fermented lambics aged in oak foeders. Whole raspberries are macerated with mature lambic, allowing natural sugars and aromas to integrate before secondary conditioning in bottle. No cultured yeasts; maturation relies on native microflora and cool cellar ageing to build complexity and fine carbonation.

Vineyard / Field Notes: While not a grape wine, the beer draws character from local ingredients and terroir — barley and wheat grown in the Pajottenland region, the Senne valley's wild microflora, and carefully sourced ripe raspberries from nearby growers. Those elements give the beer its bright, field-fruit profile and rustic, mineral edge.
