This 2008 Premier Cru from Puligny-Montrachet Les Demoiselles shows the developed complexity of an aged white Burgundy. On the nose there are bright citrus peels and orchard fruit at first, then layers of toasted almond, warm vanilla and honeyed tertiary notes from bottle age. The palate is medium–full, creamy and rounded, supported by lively mineral acidity and a finely integrated oak influence. Barrel fermentation and élevage in French oak (including some new wood) with partial malolactic conversion have contributed to the wine’s texture and spice notes. The vineyard sits on classic Côte de Beaune limestone soils with good slope and drainage, producing concentrated fruit with pronounced minerality. Best served after a short decant to lift tertiary aromas and show the wine’s long, saline finish. Excellent with richer seafood preparations, white meats and mature cheeses.
