田地與釀造:Holdaway 家族世代耕作,採乾種植、免耕與混種間行,提升土壤有機質。採整串輕壓後只取自由流出汁,入三至五年法國大桶,自然發酵、不攪桶,14個月酒泥陳放造就了現在這種細緻黏稠的口感。

Sommelier's Notes: The 2023 'Abstract' arrives medium‑to‑full, with bright citrus top notes, orchard flowers and a beeswax sheen that opens to green melon, physalis and grapefruit. The oak influence is present but measured — lees complexity and a gentle, natural malolactic fermentation round the palate into a textured, slightly phenolic finish. Decant briefly (about 30 minutes) to reveal its layered profile.

Winemaking & Vineyard: Grapes are whole‑bunch pressed; only the free‑run juice went to seasoned French oak puncheons and the wine fermented spontaneously on full solids. No barrel stirring, natural malolactic fermentation and 14 months on lees give weight and nuance. The Holdaway family’s dry‑farmed, mixed‑species inter‑row regenerative approach and zero‑till policy contribute deeper soil character and notable minerality.
