Winery & Production Notes: Brouwerij Cantillon handcrafts this Gueuze by blending young and old lambics matured in oak barrels in the Zenne Valley. No cultured yeasts or shortcuts—fermentation happens with native microbes, followed by bottle conditioning for natural effervescence. The result is a dry, zesty bottle with cellar-developed barnyard and citrus notes.

Tasting / Sommelier Notes: Bright lemon and green apple up front, followed by savory barnyard, wet hay and a stony minerality. High, racy acidity and fine persistent carbonation keep it razor-clean; finish is long, dry and slightly saline. Serve well-chilled in a tulip or flute.
