Tasting note

The 2015 Dom Pérignon Brut is a classically poised prestige cuvée from a warm, expressive vintage. A fine, creamy mousse gives way to layers of citrus peel, white stone fruit and delicate floral notes, wrapped in brioche, toasted almond and subtle coffee-smoke nuances. Chalky minerality and a saline streak provide tensile freshness, while long lees ageing (nearly a decade) and a restrained Brut dosage (≈4.5 g/L) deliver a silky texture and focused precision. Produced by the house’s prestige cellar using the traditional method and mature Grand Cru parcels (notably Hautvillers), this bottle shows both early charm and long ageing potential. Serve well-chilled; a short 20–30 minute aeration can open aromatics and silk the palate.

Winery

Dom Pérignon is Moët & Chandon’s prestige cuvée, created in 1937 and named after the Benedictine monk associated with early Champagne innovation. As a top-tier bottling, it sources fruit from premier and Grand Cru plots, undergoes extended lees ageing and meticulous cellar management under the LVMH umbrella. Each vintage is assembled to express both house style and vintage personality, balancing richness with tension.
