Tasting Note: Bright, light-golden bubbles carry an elegant autolytic character — brioche, bread crust and toasted nuts up front, followed by dried apple, pink citrus and subtle red-fruit hints. On the palate it is bone-dry with a fine creamy mousse, pithy lift and crisp acidity that lead to a medium–long, vinous finish. Producer Notes: Louis Dousset’s Assemblage Grand Cru Brut showcases fruit from Grand Cru sites and a thoughtful use of reserve wine. The non-vintage blend leans on reserve stocks (about 37% from the 2015 base) to provide depth and consistency, while a zero-dosage disgorgement (March 2023) leaves the wine austere, precise and terroir-driven. Winemaking Notes: Made by the traditional (méthode traditionnelle) route, extended lees aging builds autolytic complexity and a creamy texture. The house uses a significant proportion of reserve wines to balance structure and to retain freshness; the final bottling was disgorged in March 2023 with no added sugar. Vineyard Notes: Sourced from Grand Cru parcels, the wine reflects freshness and minerality with concentrated, vinous character.
