高柏麗2013年呈現典雅卻有力的口感:初聞有紅黑果實與淡淡雪茄、紅土、香草與可可氣息。入口以清爽的酸度撐起緊緻果實,細緻的單寧像細沙般包覆味道,餘韻礦感與香料慢慢延展。酒莊在低溫緩慢發酵(約25°C)及18個月的橡木熟成下,保留果香同時讓結構更柔順。2013年天氣多變、果粒較小、產量有限,因而更顯集中與純粹;採收與分選工作格外謹慎,確保進入酒窖的是成熟且品質高的果實。建議醒酒45至60分鐘再喝,或放幾年讓單寧更圓潤。搭配烤牛排、燒鹿肉、菇類濃汁或熟成乾酪都很合拍。
A refined expression from one of Pessac-Léognan’s benchmark estates, the 2013 Chateau Haut-Bailly blends poise with concentration. The nose opens with layered dark and red berry notes, tobacco leaf, cedar and a mineral suggestion. On the palate it is lively and sculpted — fresh acidity frames concentrated fruit while fine, grainy tannins provide structure without aggression. Winemaking was careful and low-temperature (vinified slowly at ~25°C) to preserve aromatic lift; ageing for 18 months in oak adds spice and gentle toast. The 2013 season brought uneven weather and smaller berries, leading to lower yields but very concentrated material; meticulous sorting at harvest ensured only ripe, balanced parcels reached the cellar. Drink now with an hour’s decant or cellar a few more years for added integration. Pairs beautifully with roasted and grilled red meats, game and mature cheeses.
