【侍酒師私房筆記】開瓶後先等一會兒,前段是黑莓、黑加侖,轉為雪茄盒木、可可和一點胡椒香。酒體中偏厚但不笨重,單寧結構緊實而細緻,帶礦物鹹感把整體撐起來。醒個90分鐘,香氣會慢慢打開,收尾有長長的木調與苦甜巧克力尾韻。

【生產與田地】La Gaffeliere 由 Malet‑Roquefort 家族經營;葡萄園約22公頃,位處石灰岩平台與黏土石灰坡地,行間有草皮覆蓋以維持土壤健康。人工採摘、分箱入廠,先低溫12小時冷藏再光學分揀;分地塊不銹鋼控溫發酵後做部分桶內、部分槽內完成乳酸發酵,最後在一、二年木桶陳14個月(酒莊亦曾使用陶缸作輔助陳年)。

[Sommelier's Private Notes] Pour and wait — the nose opens from compact blackberry and dark currant to cedary spice, cocoa and subtle tobacco. On the palate the wine sits medium–full, concentrated but refined: ripe dark fruit framed by firm, grainy tannins and a saline, mineral lift. The finish is persistent, with cedar and dark chocolate echoing long after the last sip.

[Winemaking & Vineyard] Grapes are cold-soaked then sorted by parcel, vinified in temperature‑controlled stainless tanks with gentle extraction and gravity fills. Malolactic conversion is completed mainly in tanks with a portion in barrel; ageing ~14 months in one- and two‑year oak (with some amphora influence noted historically). The estate farms ~22 hectares on limestone plateau and clay-limestone slopes with hand-harvest and integrated viticulture under family ownership.
