Tasting note: Pale gold with bright, lifted aromas of lemon peel, green apple and white flowers, followed by unmistakable wet-stone and sea-spray minerality. On the palate it is incisive and energetic: stony, chalky mid-palate, crisp citrus backbone, hints of toasted almond and a subtle honeyed patina from bottle age. The texture is silky with focused acidity and a saline, lingering finish that keeps the wine precise and refreshing. Producer notes: From Domaine Daniel-Etienne Defaix’s Grand Cru Blanchot parcel, fruit is hand-harvested from steep, Kimmeridgian limestone slopes and farmed to emphasise purity and site expression. Winemaking notes: Grapes are handled gently with careful pressing; fermentation and élevage balance stainless-steel freshness with selected barrel ageing and lees contact to build texture without obscuring terroir. Vineyard notes: Low-yielding vines planted on the classic Chablis Grand Cru exposures, soils of hard limestone and fossil-rich marl give the wine its tense minerality and saline drive. Cellar advice: serve well chilled and allow 30–60 minutes aeration to open the finer aromatic layers.

In the cellar they favour gentle extraction, lees contact and measured barrel use to add texture while keeping terroir foremost.
